The 2015 vintage treated us with a relatively mild, cool, growing season and good yields. This vintage, like all before it, have required an extensive hand-sort to remove dehydrated berries and keep the sugar, and alcohol when fermented to dryness in balance. The reason we only harvest 1.3 Ton: it's all we can usually hand-sort in a day. The 2017 vintage is once again Alsatian inspired and dry by both balance and residual sugar.
