Goat Cheese & Walnuts | 2009 Syrah (August 2012)

This pairing was introduced to us at a recent winemaker gathering. The evening's topic: bring a bottle of wine that inspires you.  Needless to say, some spectacular wines were poured and insights shared as to each of our stylistic wine and winery goals.  One of our winemaking friends brought this dish and we couldn't help but not recreate it as it's incredibly simple and delicious.

  • Capricho de Cabra (Goat Cheese from Spain)
  • Walnuts

The goat cheese was the key, and this particular one is beautiful and complex. The walnuts provide a spectacular complement to the cheese.  Simply crumble, or slice, the cheese and top with walnuts.  Next, add wine.  We chose to pair this with our  2009 Syrah.  Our 2009 Syrah, despite being cellared 11 months prior to release, is still young and thus gives you several options.  First option, it will cellar beautifully: lay it down.  Second option, it has a great spice to it: pull the cork and pour yourself a glass.  Third option, if you prefer a softer more luscious Syrah: decant it.  It's a really interesting wine to explore decanting and wine evolution, give it a try, there is no wrong answer: trust your palate and enjoy.
