Cardamom-Laced Truffles with Murray River Sea Salt | 2008 Valley Cabernet Sauvignon (April 2012)
For a recent event, the 2012 Boulder Wine Trail Passport, we wanted to present truly magical pairings. We would be pouring two weekends at Savory Spice Shop in Boulder and asked Dan, the store owner, for recommendations on caterers who are also experts with his vast selection of spices. Dan recommended Kathryn and we couldn't have been more excited with the pairing results.
We find our 2008 Valley Cabernet Sauvignon is particularly well suited to chocolate pairing. It's hard to go wrong with Cabernet Sauvignon and chocolate, but, one can do even better... Kathryn suggested several spice options for chocolate truffles and the cardamom was indeed a magical pairing accentuating the spice in the wine.
